About Safari preferences.

I accept all cookies, but the Show Cookies is grayed out. It does not matter if I make any changes. More specifically some sites, like ufaq.or, ask me if I want to save the password.
This site has the information, and there is a check mark to remember. All I need to do is to click below the username/password, and I am in. It never asks me if I want to save the info.
Then there are sites like windowsbbs which I have to login every time, and the check mark disappears when I enter the info.
Also, History is set to be removed manually (also grayed out). And, can't even see a place to store passwords.
Any comment from an user of Safari? Other than it is preliminary
