I have been saving a spare copy of the messages I send in the Templates folder and up to now I thought it listed a column with the recipients which included their name and email addresses. But now it seems that column listing the recipients is gone and is replaced by a column with the sender which only includes my name for every message. Is there a way I can display the column with the recipients that include their name and email addresses? I am fairly sure was in the Templates folder before so you would think it should be able to be easily changed back.

I assume you are talking about Netscape Messenger (the Mail component in Communicator 4.xx series), right?

For all sent mails, there will be a copy of them in the Sent folder (by default). I am about 75% sure there's no way to see the recipients in Templates folder or any other folder except in Sent folder. (I could be wrong.)
The work around, check the Sent folder OR move the emails to Sent folder.

See above, and use Sent folder instead.
