Is there any standalone software for Mac that can filter and examine HTTP headers by acting like a proxy?

I don't know of anything that specifically works via proxy, but you can use Wireshark to inspect HTTP headers. Just use "http" as a filter to get all of your other traffic out of the log view.

Thanks, but I want to filter the content in the headers as well. For instance I would like to remove referers from the browsers' request headers unless I am following links entirely within a given site.
