So far, I don't like it. Two extentions which are important to me, Forecastfox, and in three attempts I was able to see that another update was needed, but failed to work, getting a blank page. I finally installed it, but it did not,after restarting FF
Similarly the Roboform extention is not working any more, and there is an update, but no go so far..

In case it helps, here's how I installed Firefox 1.0.7 this morning.

1. Downloaded "Firefox Setup 1.0.7.exe" to my D:\Setup folder (you can download it to any location) using the "Free Download" link at http://www.mozilla.org

2. Removed my previously-installed Mozilla Firefox 1.0.6 version using Control Panel, Add/Remove Programs. (This step is not needed with current Firefox versions, but old habits die hard.) My Firefox profile with all my user data (bookmarks, passwords, etc) and my installed plugins were not touched by the uninstall.

(If you haven't cleared your Windows Temp folder recently, now is a good time. On Windows XP, go to Start -> Run and type in %temp% to open the temp folder, then select all files and delete them.)

3. Disabled my antivirus program and then double-clicked the "Firefox Setup 1.0.7.exe" which started the Firefox 1.0.7 installation, a very simple process.

So far my four extensions seem OK:
UserAgent Switcher 0.6.6
BBCode 0.4.1
Greasemonkey 0.5.3
Sage 1.3.5

Which Extensions will work?

I've seen it suggested to disable, then reenable problem extensions, kind of like a kick-start. From the last link above:

Alice, after much struggle, I was able to install the Roboform extention. It took me half a dozen tries. As for Forecastfox, I installed the new update from the .xpi file, and it came disabled. Right click| Enable did nothing.
I may try again, with direct installation, rather than .xpi, which I have been using all the time, in the past. Should anyone care, the Forecastfox extention is 0.8.2.1, and the Roboform is 6.4.2.
Same results with direct installation. I am wasting too much time on this silliness. I know what the weather is like. Too hot.

I noticed that three of my extentions are disabled in 1.0.7, Forecastfox, Prefbar and Foxytunes. All three are grayed out and disabled, but the last two are still visible.
I uninstalled Forecastfox, and installed 1-click weather from the Weather Channel, and it works ok.

Don't know why I was so lucky, as I just installed over the top with no prep, but all my important extension continue to work (Add Bookmark here 0.53, Whois Lookup 0.1, Forecastfox 0.821, Customize Google 0.027 & No Script 1.1.2.20050901. I have never been able to get view cookies or delicious delicacies to work on any version of FF, although I haven't bothered to uninstall them. I have a few others I haven't had time to check, but basically all good.

As an fyi, of all the extensions I've tried, I consider Add Bookmark Here indispensable, & No Script very useful.

I have Firefox on 2 machines. Upgrading to 1.07 went perfectly as described earlier on #1. On #2, it said Add Bookmark here was incompatable with anything lower then 1.0x (not a typo; it did say lower then & about does confirm 1.07) & wouldn't run or reinstall it. Very strange as the same extenssion works fine with 1.07 on my other machine......
