So. Here is what I finally decided on. It's far meaner than before, and costs less than $2000CDN/$1500USD (though I admit I already have peripherals and a CD-RW drive). The reason I'm going socket 754 and AGP is because by the time I upgrade any component, I'll need a new motherboard anyway.
Case/PSU: Antec 1080 Performance Series (silver, w/480W Antec PSU)
I really like this because (as is the case with most Antec products) it has a tremendously good power supply, is sturdily built, has good airflow, and is also silver-coloured to go with my keyboard and monitor.
Monitor: Samsung Syncmaster 997DF (silver and black, 19" flat screen, .23mm diagonal dot pitch)
I gave up on an LCD because they just cost too much and don't offer the versatility I need; this monitor looks good and reportedly performs well too, while not taking up too much space (it's also shadow mask because I hate aperture grilles).
Motherboard: Gigabyte GA-K8VT800 Pro (SATA RAID, AGP, 8-channel sound, 1394, USB, Gigabit LAN)
Since I'm running my hard drives in RAID-0 and don't want to buy a sound card, I needed to get a mobo with both of these; of course since most mobos have this, the main concern was stability and performance, which this provides.
CPU: AMD Athlon64 3400+ (1MB cache)
I'm an AMD convert as a result of reading review after review where the 64-bit processor trounces Prescotts at 32-bit operations for a lower price.
RAM: 1024MB Samsung PC3200 (2x512MB)
This stuff is dirt cheap and hopefully won't disagree with my motherboard; it's from a reputable source too, so I feel good about it.
GPU: Leadtek A400GT Nvidia 6800GT (256MB, GDDR3, VGA, DVI, TV-out)
Because of this card's 16 pixel-pipelines, it can overclock to an extremely high performance, over that of the stock x800 XT Platinum.
HDD: 160MB Seagate Barracuda (2x80GB RAID-0, SATA, 8MB Cache, 7200RPM)
These are fairly quiet and a cost-effective means of getting high amounts of storage at a high speed in RAID-0.
DVD-ROM: NEC reader (16x DVD read speed)
I haven't gotten this yet, but it'll just serve as the secondary drive for CDs and will be used for DVDs, obviously.
CR-RW: LG GCE-8525B (52x CD-R write, 52x CD read, 32x CD-RW write)
I got this on sale a while ago for a ridiculous price, and it will be the centrepiece of my CD capability.
