In VMware Fusion (Beta)'s release notes, it says:
Leverage Virtual SMP capabilities to gain additional performance improvements. On any Mac with dual-core processors, you can assign multiple CPUs to your virtual machine to gain additional performance for CPU-intensive workloads.


What is SMP? And exactly what does SMP do?

SMP stands for Symmetric Multiprocessing, and is where two processors share the same memory and therefore can be used to perform the same task.

Why do you need two or more processors to run the same task?

Is that something to do with "MP-aware" thing?

You don't need to execute a task on two processors, but oftentimes it's faster, especially in the case of heavy-duty workloads or processes that run on more than one thread.
