Well, I beat you to it here 
Only bad thing about this, IMO, is the new Dual 1.8Ghz G5. It has only 4 DIMM slots, and no PCI-X slots. (Like the old 1.6Ghz G5) The Dual 2Ghz and new Dual 2.5Ghz G5 have PCI-X and eight DIMM slots.

Dual 2.5GHz G5...
Just make me feel my Macs are getting slower now 
My PowerBook 12" is only 1.33GHz. My PowerMac Dual G4 is Dual 1.42GHz.
But, hay, the 1.33GHz PowerBook is still faster than the 3.2GHz Pentium 4 in DNA sequence matching, according to PowerBook G4 Technology Overview (April 2004) (pdf). I think I should be happy.

Standard water cooling, dual 2GHz 64-bit G5 processor? That would become my main PC if I had some $5000 dollars to spend on it... Until then it's the sub-$200 build-it-yourself-and-run-the-same-old-copy-of-Win98-on-it for me.

No, the liquid cooling is only on the top of the line dual 2.5GHz, not dual 2GHz.

Well, $5000 is AU$. It would be $2999 for Dual 2.5GHz.

Well, unless you are really interested on purchasing one of those machines, otherwise, you don't really need to ask.
The liquid cooling was designed to cool down the CPUs, it will be strong enough.
And the answer to your question...
1. send it back to Apple for repair or replacement;
2. remember to purchase the additional warranty (for 3 years) with AppleCare;
and most importantly,
0. it will be a big news. More serious than the crack hairline in G4 Cubes.
We do have zeroth law of thermodynamics.

I had wondered how safe such a system is, where water is involved, and if it leaks all over the inside of the system, especially if it's powered on when it happens, what a mess! Not to mention a fried system!

From some other technical articles I read, they don't really use "water". It's a special liquid.
If Apple can't guarantee the safety and the government approves it, you can claim compensation from government.

Well, not having an X800 makes me angry, and apple sitting on their DDR-400 RAM is no good. With only 6.4GB/s throughput to the processors, the performance of the new G5s will be limited by that. Jobs promised 3GHz before the end of the year, and I don't know if we'll see it, but IBM is richer than anyone really knows and has superior marketing techniques (ie, they milk any new competing processors by sticking them in IBM servers and selling them) not to mention the fact that they throw ridiculous amounts into research when they actually feel like beating their competetors. Really the G5 has become IBM's child, sporting higher speeds than their own power5. IMO, what jobs ought to do for the 3GHz, which may come quickly which the adoption of a liquid cooling system, is push for the X800 XT or whatever GPU is top at the time to be ported to mac for it, and also move to DDR2 with at least DDR2-600 to better feed the 1.5GHz FSBs. Now I'd also like to see 128bit busses (which would be an entire 64bit instruction up and down each cycle) and the adoption of hyperthreading like in power5s, but whether or not apple will decide to push for higher technologies like that is debatable. Of course, a year ago a 1GHz FSB was unheard of, so who knows.
